The Original HandiFacts Culinary Reference Card Published in 2002

Chef Michael Barnes started in the food service industry as a dishwasher, busboy, waiter, line cook and eventually a full-time student and tutor at a Le Cordon Bleu in 2001-2002. After noticing the number of people who couldn't remember how many ounces are in a cup (it's 8oz. wink-wink), the Chef created the first edition HandiFacts© Culinary Reference Card to assist his fellow classmates with the math that is necessary to be successful in the industry. He then went on to design an entire series of HandiFacts© Cards to help the home cooks, all while focusing on his custom chocolate career. Chef Michael designed and created his own style of wine tasting chocolates and VIP chocolate customs at Pieces of Chocolate in Danville, CA. This eventually led him to the Napa Valley to host chocolate and wine pairings, seasonal food and wine pairings at Cosentino and Clos Pegase Wineries and to study from winemakers he admired.
